Researchers at Boston University School of Medicine are saying eating mushrooms can provide as much Vitamin D as taking a supplement but they must be put in the sun first.  Like human skin, the fungi transform UV light from sunlight into vitamin D, which makes eating them an excellent source for the vitamin. Vitamin D is essential for the immune system, strong healthy bones and teeth and the absorption of calcium. (dailymail.co.uk)
