4 – 6 Medium Sized Soft Shell Crabs

1/3 cup milk

2 eggs, beaten

2 tsp. Beazell’s Cajun Seasoning

2 cups all-purpose flour

3 tsp. Lemon Beazell’s Cajun Seasoning

Vegetable oil for deep frying

You gotta clean these crabs up first. Start by removing the gills just by pulling them out. Then I take a pair of scissors and cut right behind the eyes to remove them. Don’t want them staring at me while I am eating! lol Rinse them real good with only cold water and pat dry.

Mix milk and your beaten eggs in the bowl with Beazell’s Cajun Seasoning. Put flour and Lemon Beazell’s Cajun Seasoning in a shallow bowl and stir to mix.

Heat oil in a deep fryer to about 365 degrees.

Run your dry crab through the flour mixture, then dip it real well in the milk mixture, then run it through the flour mixture one more time. Carefully place crabs in the deep fryer. Cook for 2 minutes or golden brown on one side and then gently turn and cook another 1 – 2 minutes until the whole crab is a nice golden brown. Drain on rack with paper towels underneath. Eat immediately and YES….you can eat the whole thing!
