sweet potato cheese cake

INGREDIENTS

    • Cheesecake Crust
    • 2 cups crushed gingersnaps
    • 4 tbsp melted butter
    • Sweet Potato Cheesecake Filling
    • 3 packages cream cheese, soft at room temperature
    • 1 cup Imperial Sugar Extra Fine Granulated Sugar
    • 1/2 cup Imperial Sugar Dark Brown Sugar
    • 4 large eggs
    • 1 can (15 ounces) sweet potato pie filling
    • 2 tsp cinnamon
    • 1/2 tsp ginger
    • 1/4 tsp cloves
    • 2 tsp vanilla extract
    • 1/2 cup firmly packed Imperial Sugar Dark Brown Sugar
    • 3/4 cups whipping cream
    • 4 tbsp butter
    • 1/4 tsp salt
    • 1 tbsp vanilla extract
    • 1 1/2 cup pecan halves
  • The original recipe calls for pumpkin but I love sweet potato
