- 4 ears corn, silks removed, husks pulled back and left attached
- 4 tablespoons butter, room temp
- 1/4 teaspoon ground chipotle pepper
- 1 large red bell pepper
- 1 zucchini, sliced in half lengthwise and rubbed with olive oil
- 1/4 cup red onion, diced
- 1/2 cup fresh cilantro, roughly chopped
- 1 teaspoon ground cumin
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Juice of two limes
- Salt and freshly ground pepper to taste
