3/4 c. butter

1 onion, finely chopped

1 can onion soup

1 can cream of chicken soup

1 can Rotel tomatoes, with juice

2 Tbsp. any Cajun Seasoning

2 lbs. shrimp (peeled and deveined)

2 cups rice, cookedHeat butter in dutch oven. Add onions and cook down until wilted. Add remaining ingredients and cook for 3 to 5 minutes. Pour in 9 x 12 casserole dish and bake at 350 degrees for 45 – 50 minutes.You can cover the top of this casserole with Parmesan cheese during the last few minutes of baking in the oven. Makes it ooey gooey!
