- 1 bunch asparagus tips
- 2 tablespoons extra-virgin olive oil
- 1 shallot, finely diced
- 1 tablespoon minced garlic
- 1 pound mixed wild mushrooms, chopped*
- 1 bay leaf
- 1/4 cup red wine
- 1 cup chicken stock
- 2 tablespoons heavy cream
- 1 (12-ounce) package wonton wraps*
- 1 egg, beaten
- vegetable oil, for frying
