Chocolate Cognac Cupcake Recipe
For the Cupcakes:
- 1/2 C + 1 tsp unsweetened Cocoa Powder
 - 1/2 C boiling water
 - 1/4 C Plain Greek Yogurt (or you can use Sour Cream)
 - 1 tsp Vanilla Extract (I used my homemade Rum-Vanilla Extract)
 - 3/4 tsp Cognac (I used Hennessy V.S.©)
 - 1/2 C + 2 T all-purpose flour
 - 1/4 tsp + 1/8 tsp baking soda
 - 1/4 tsp kosher salt
 - 8 T (1 stick) unsalted butter, at room temperature
 - 3/4 C + 2 T sugar
 - 1 Large egg
