Chocolate Cognac Cupcake Recipe

For the Cupcakes:

• 1/2 C + 1 tsp unsweetened Cocoa Powder
• 1/2 C boiling water
• 1/4 C Plain Greek Yogurt (or you can use Sour Cream)
• 1 tsp Vanilla Extract (I used my homemade Rum-Vanilla Extract)
• 3/4 tsp Cognac (I used Hennessy V.S.©)
• 1/2 C + 2 T all-purpose flour
• 1/4 tsp + 1/8 tsp baking soda
• 1/4 tsp kosher salt
• 8 T (1 stick) unsalted butter, at room temperature
• 3/4 C + 2 T sugar
• 1 Large egg
